    If you click the Default skills it will put in all the base skills for d20 3.5.  As to thief-type skills, they are accessible to everyone and not separate like 2nd ed.

    Basically you have a whole list of skills, here is a list: http://www.d20srd.org/indexes/skills.htm

    The cool thing about 3.5 is the basic rule set is free.

    If a skill is on your class list, it uses 1 skill point per level, if a skill is not, it uses 2.  For examples of how many skills different characters get, fighters, clerics, paladins, and wizards get 2 + intelligence (usually referred to as 2+i) bonus per level, rangers get 4+i, bards get 6+i, rogues get 8+i.  The combination of skill points per level and class skill list makes it so most people conform fairly well to the kinds of skill sets you'd expect, while still allowing people to deviate (but at a cost of not having many skills).

    Everything uses a d20 + skill ranks + attribute + miscellaneous bonuses (like elves get +2 to spot and listen checks) with a difficulty either assigned by the DM or assigned inside of the skill itself (like to know about a beholder is a knowledge (dungeoneering) check against a DC of 10 + the monster's Hit Dice, with every time you exceed the check by 5, another bit of knowledge about the beholder would be known. 

    Also, certain classes, like rogues, get what is called trap sense or finding or something like that.  Disable Device (which is what used to be disable trap) can be used to disable normal traps, while anyone with trap sense can use disable device to disable normal traps + magical traps (magical traps have a DC of 25 or more).

    The whole system needs a lot of work, but its on its way. :)
